The Sang de Papète is a genuine return to roots and a tribute to Sophie Guizard’s grandfather who started this Carignan plot not far from the town of Béziers more than sixty years ago. These old vines are cultivated organically and produce very low yields of concentrated berries, with no more than 15 hl per hectare. Their grapes are hand-picked, destemmed, and then fermented in stainless steel vats with natural yeasts over an extended period. Maturing continues for 24 months in second-fill Burgundy barrels, before the wine is bottled in keeping with the lunar calendar, without fining or filtration.
Produced in very low quantities, Sang de Papète reveals an intense bouquet of black and red fruits, peony, violet, and garrigue. Its powerful character is balanced by a beautiful freshness, resulting in a wine of infinite delicacy that lingers for quite some time on the palate. This wine may be enjoyed while young but can also be aged for up to 10 years in a cellar.

In den 2000er Jahren, während seiner Partnerschaft mit Frédéric Poutarlié, Winzer und Eigentümer der Domaine Montcalmès, initiierte Vincent Guizard eine Rodung, indem er neue Parzellen auf Hängen mit großen Rollkieseln pflanzte. Dies geschah im Gebiet Brousses, zwischen Aniane und Puechabon.Als er 2010 seine eigene Domaine mit seiner Frau Sophie gründete, behielt er diesen Weinberg, der sich heute auf acht Hektar erstreckt. Das Paar entschied sich für eine nachhaltige Anbauweise, förderte die manuelle Arbeit und setzte alles daran, dieses Terroir und das Bodenleben hervorzuheben. Jede Parzelle wird sorgfältig bewirtschaftet, und jeder Rebstock wird als eigenständiges Individuum behandelt. Vincent und seine Frau erlernten sogar das Pfropfen, um ältere oder kranke Rebstöcke leichter ersetzen zu können.
