The wine
A single cask Ballechin (#186), the peated version of Edradour, distilled in 2008 and bottled at cask strength in 2018 by Signatory Vintage, matured in a refill sherry butt. Signatory Vintage was founded in 1988 by Andrew Symington, who previously worked at Prestonfield House, Edinburgh, where he would select casks specially for the hotel. In 2002, he bought the Edradour distillery in Pitlochry, in the Highlands of Scotland and moved Signatory Vintage vintage to the site, including the warehouses opposite the distillery. A limited edition of 703 bottles for La Maison du Whisky.

Owner: Signatory Vintage & CoProduced at the Edradour distillery since the early 2000s, Ballechin was, for just over a century, one of the fifteen distilleries operating in the Pitlochry area, from 1810 to 1927. Then a consultant and master distiller for Edradour, Laphroaig's former manager, Iain Henderson, made a number of adjustments to the former, including the introduction of peat, in order to produce a second peated malt named Ballechin.Launched in 2006 as part of the Discovery Series range, a limited series finished in various types of cask, Ballechin has since celebrated its 10th anniversary and continues to add to its collection of single casks to respond to consumer demand.
