Olivier Pithon is the grandson of an Anjou wine grower, and also has a grower for a grandson in the Coteaux du Layon. Having trained among the family vines, and after completing various spells at in other vineyards (including several years in the Bordeaux region), Olivier Pithon settled in Calce, near Perpignan, in 2001. His vineyard, covering just over eight hectares, is farmed biodynamically. Olivier Pithon's wines are authentic, direct and very expressive.

This cuvée (named after a cow) combines freshness and vivacity, a pleasure to drink, its fruity character bearing traces of floral notes and a stunning minerality.
