Beaune Les Prévoles Maxime Dubuet Boillot 2022

Les Prévoles from Maxime Dubuet-Boillot is a cuvée made from 100% Pinot Noir, cultivated on approximately seven hectares of vines located on the Côte de Beaune. The vines benefit from an exceptional terroir with rich clay-limestone soils, imparting great finesse and a beautiful expression of the site. The grapes are hand-harvested, with a rigorous selection process to ensure the highest quality. The vinification is precise and meticulous: after a partial destemming, fermentation takes place in stainless steel tanks using indigenous yeasts to preserve the grape’s typicity. Ageing is conducted in French oak casks, with a portion of new wood, for 12 to 18 months.
On the nose, this nectar reveals aromas of red fruit like cherry and raspberry, along with notes of spice and a touch of wood. On the palate, it is characterised by its freshness, balance, and silky tannins, with a lovely aromatic persistence.
