Nuits-Saint-Georges Fleurs de Coteaux Maxime Dubuet Boillot 2023

This Nuits-Saint-Georges crafted by Maxime Dubuet-Boillot stems from a two-hectare vineyard on clay-limestone soils typical of the Côte de Nuits. This terroir imparts a refined, complex expression to the Pinot Noir. The grapes are hand-picked, ensuring a rigorous selection of bunches to guarantee the highest quality of the raw material. The fermentation process takes place in open vats, followed by gentle pressing. The juice is then matured for 12 to 18 months in oak casks, with a small proportion of new oak, to add subtle hints of vanilla and toast without overpowering the fruit.
On the nose, this nectar offers seductive aromas of stewed red fruit, cherry, strawberry and peony. On the palate, it is structured with pleasant, silky tannins, revealing a lovely freshness on the finish. This elixir is already accessible but will gain in complexity with a few years of cellaring, revealing its full potential in the cellar.
