Domaine Henri & Gilles Buisson is run by a very old family of Saint-Romain, a village where it has been established since the 12th century. Gilles Buisson’s sons, Franck and Frédérick, who currently run the family vineyard, embody the eighth generation. The vineyard which they have converted into organic farming covers 19 hectares spread over Saint-Romain, Pommard, Grand Cru Corton Charlemagne, Volnay 1er Cru and Beaune. This domain produces racy and complex wines, with good aging potential.
This saint-Romain blanc, named "Sous le Château", owes its name to the terroir located at the entrance of the village under the ruins of a medieval castle destroyed during the French Revolution. The élevage in oak barrels of this Chardonnay mono-grape variety with fruity aromas (yellow fruit, citrus fruit), gives it little notes of woodiness. On the palate, the wine is full-bodied, creamy and coated with honeyed flavours. The mineral and fruity texture gives it a little freshness, and , above all, a nice length. This wine can be kept in the cellar for a few years, even if we recommend you open it within five years. The ideal pairing? Fresh and creamy cheeses or a sauce-based poultry dish will be the perfect pairings.
