About the wine

Daniel Crochet’s domain is reputed for its careful work in the vineyard and its meticulous vinifications. This cuvée is a white Sancerre made from 50-year-old Sauvignon blanc vines. This varietal enjoys the influence of the local terroir, characterised by white clay, chalk, and pebbles. The producer allows grass to grow in the vineyard, and the grapes are harvested by hand. Herbicides and chemical additives are banned.
In the cellar, the grapes are directly pressed to preserve the fruit’s purity. The juice ferments at a controlled temperature for freshness. Then the wine is matured on fine lees for 5 to 9 months.
In the glass this wine has a pale, yellow colour with a lively bouquet and a pure palate. We recommend serving the cuvée in its youth with a cheerful dish like goats’ cheese, seafood, or smoked salmon with asparagus.
