About the wine

Crisp and flavourful, this red Sancerre is a gem and a pure expression of its terroir. To craft it, Daniel Crochet grows his Pinot noir responsibly, his plants enjoying the influence of chalk and clay soil on Kimmeridgian marl. Grass is grown in the vineyard and yields are limited. Herbicides and chemical additives are banned.
After harvesting by hand, the bunches are destemmed before a cold maceration and temperature-controlled fermentation, the latter triggered by wild yeasts. The wine is matured in different containers (casks and concrete vats).
This is a ruby red wine with irresistibly flavourful notes of red fruit like raspberry, redcurrant, and cherry. The tannins are delicate and the finish is sapid. This is a good aperitif wine to enjoy with terrines, grilled dishes, or rustic vegetable tarts.
