Château de Cruzeau (no reserve) 1983
The wine
The 27 hectares of vines used for the production of this cuvée grow in deep, gravel-rich soil. The Sauvignon Blanc grapes are harvested by hand. Once in the winery, the grapes are vinified in oak casks then left in contact with their lees during fermentation. The lees remain in the barrels for maturation, a process that takes around 10 months in 35% new wood. The wine has a brilliant, yellow colour. It is intense on the nose, giving off lively citrus and elderflower notes. Its attack on the palate is marked by a lovely acidity balanced with the generosity conferred by the maturation on lees. This especially elegant wine will pair nicely with veal or a fish risotto. It can be aged for 2 to 10 years.
