The wine
An iconic Provence domain which presents a surprise with this wine: it has mineral notes, well-balanced when tasted, a beautiful mellow quality and a superb bouquet of white flowers. A blend of Roussane, Marsanne and Clairette, it can be aged for 15 years before being enjoyed alongside fresh, grilled fish.
About the Producer Hauvette
Dominique Hauvette is a discrete winemaker whose work is simply remarkable. Located in Saint-Remy-de-Provence, she founded the domain in 1988 with two hectares and a dilapidated winery. The clay-limestone soils and the discerning vinifications and élevage have allowed Dominique Hauvette to raise her domain to the finest in the appellation. The domain has been cultivated in biodynamics since 2003. The reds are racy and intense, whereas the whites are big and ripe, with bitter notes.
