The wine
This wine is made with grapes cultivated on clay and limestone soil. It is fermented in oak tuns and then matured for 18 months in French oak barrels. It needs at least four years in the cellar before opening and is at its best when decanted to a carafe one hour before serving. The nose reveals aromas of very ripe, almost stewed, fruits, and spices such as liquorice and vanilla. The palate has prominent tannins that will soften over time. This wine is superb with full-flavoured meat dishes.
About the Producer Pago de los Capellanes
The Pago de los Capellanes bodega founded in 1996 produces wines made exclusively from Tinto Fino, an indigenous form of Tempranillo. It is divided into 35 parcels which are vinified separately and produces very structured, elegant wines, with fine fruitiness and an exquisite bouquet.
