This cuvée was grown in the Billat plot that gives it its name. It is made of a Chardonnay that benefitted from organic growing on a terroir rich in clay and schists. The domain has prioritised single-parcel vinification, on lees, and an élevage in 228-litre barrels. On the palate, this wine has a supple texture and aromatic generosity. It will be best placed with oily fish or dishes with a creamy sauce.
