Chambertin Clos de Bèze Grand Cru Peirazeau-Groffier 2001
The wine
A veritable rarity, this Chambertin comes from a terroir influenced by a pleasant, oceanic climate. The Pinot Noir used to make it has drawn its nutrients from a soil rich in chalk and marl.
This is a wine with the weight of history on its shoulders, since the cru dates back to the 7th century when the monks of Bèze Abbey tended to the vines. The cuvée is made to be aged for a long time, around 30 years in all. In the glass, it has a cherry red hue that deepens to garnet over time. A great variety of aromas emerge. There are notes of red and black fruits, flowers like rose and violet, and a hint of liquorice, mint, and gentle spice. This bouquet announces a delicate palate structured by good tannins.
We recommend pairing this wine with a delicate dish that involves poultry, for example.
