Domain: Boulard

Born into a family of sixth-generation winegrowers, Francis Boulard followed in the footsteps of his father Raymond Boulard, before being joined by his daughter Delphine, who runs the estate today. The three-hectare vineyard is located in Comicy, in the Saint-Thierry mountains, to the north-east of Reims. Vines are selected from the most robust vinestocks and cross through a silica and limestone terroir, where they have been grown organically since 2000. In recent years, biodynamic practices have also been introduced in a large part of the vineyard. A fan of plot-by-plot fermentation and interfering with the wine as little as possible, Delphine Boulard uses indigenous yeast to ferment grapes harvested when very ripe in barrels, demi-muid casks and used oak barrels, leaving them in contact with fine lees, where they are regularly stirred in the barrel. These are terroir-driven, powerful and delicious Champagnes available with or without dosage.
