Its imposing tannic structure requires it to be cellared for many years for the tannins to completely soften. "Les Forts de Latour is composed of two-thirds Cabernet Sauvignon and the rest Merlot blended with a tiny dollop of Petit Verdot, and finished at 13.5% alcohol. The "biodynamic" designation covers all estates certified for using biodynamic methods or in the process of converting to biodynamics. They are accredited by one of the two official bodies, Demeter or Biodyvin. All wines produced by biodynamic methods are also certified as organic.
The "organic" designation covers all estates certified for using organic methods or in the process of converting to organic agriculture. They are accredited by one of the bodies approved by the Ministry of Agriculture, such as Ecocert.
The "sustainable" designation covers all estates certified for using sustainable or High Environmental Value (level 3 Environmental Certification) techniques.
The "environmentally friendly" designation refers to estates practising environmentally friendly wine-growing techniques, but that have not opted for certification. These estates may have adopted biodynamic principles (non-certified) or simply no longer use chemical products.
