François Villard trained as a chef before setting up his domaine in 1989. Today, his vineyatrd spans 30 hectares over nearly all the appellations in the region. François also took part in a joint project called Vins de Vienne: him and two other master vignerons (Yves Cuilleron and Pierre Gaillard) replanted the very old Seyssuel vineyard. François loves to build, and with each vintage he creates new vats for his wine that he christens with a comical name, normally a play on words. He produces 400,000 bottles a year and is adored by enthusiasts and critics alike.
About the cuvée
« Comme une évidence » is a 100% Syrah that has been the subject to particular care. This is because, in the vineyard, as well as in the cellar, François Villard works using sustainable methods. Thus, once harvested, the berries are fermented in barrels for ten days at 60% in whole bunches before 15-month ageing in barrels of three to five wines. It has a deep ruby hue. The nose opens with notes of red fruit before evolving towards more complex aromas such as very ripe blackcurrant and plum, peppery and spicy notes. On the palette, this wine that can be kept for a decade, is highly refined. Served at room temperature, it will enhance meat terrines.
