Georges Laval 1er Cru Brut Nature Cumières 2008 (Sparkling)

Domaine Georges Laval is a niche, little family-owned champagne estate. Having just three hectares in a region famous for its imposing maisons, it is quite the challenge to stand out from the crowd. But this is a challenge met with great talent. Since 1996, Vincent Laval has been managing the property with mastery. He was immersed in the wine-making world from a young age, watching both his father and grandfather work hard on the property. Today, he is helped out by his wife and a team of three employees. Together, their farming methods are traditional and certified organic; all synthetic products, herbicides, and pesticides are banned, as is compost and soil enrichment. Work in the winery is meticulous, with no added sugar and vinification in casks. The idea is to produce a range that includes both ‘vinification wines' and ‘terroir wines'. The vinification wines are those that blend vintages and/or terroirs to optimise flavour. The others undergo natural fermentation and are vinified as single-parcel cuvées. The lasting impression of these wines is one of precision, with beautiful depth and striking density.

Vincent Laval is the current owner of the family domain Georges Laval. It is a modest estate, spanning just 3 hectares of vine-growing land. This Premier Cru Brut Nature Cumières champagne was made to be a true reflection of the eponymous village’s terroir. The producer thus blended Chardonnay, Pinot noir, and Meunier, three of the region’s noble varietals. The vines are grown with great respect for the plant, especially as this is traditional, organic-certified farming. None of the vines are treated with chemical substances. The grapes are harvested at full maturity before undergoing a meticulous vinification. Wishing to let the terroir express itself, the producer chooses not to add any sugar.
In the glass, this cuvée has a pale, golden colour with lots of bubbles. Coming to the surface, they give off delicate notes of white fruit, white flowers, chalk, and fresh almond. It is fresh and sapid on the palate. This is a cuvée that will awaken your tastebuds when served as an aperitif. If you’d like to save it for the table, serve it alongside delicate dishes such as crustaceans, or smoked salmon with avocado cream.
