    If you like dense, concentrated and well-structured Burgundian Chardonnays, we highly recommend this Saint-Aubin 1er Cru Le Charmois from the Jean-Claude Bachelet domaine. Saint-Aubin is an appellation which is gradually emerging since it is producing great wines which compare favourably to their neighbours such as the prestigious Chassagne-Montrachet for example. The Chardonnay which makes up this wine draws its distinction from a clay and limestone soil which is shallow and rich in iron oxide. It benefits from an ideal location next to the village of Chassagne and from an exposure to the rising sun, in the east. The Bachelet brothers complement these advantages with a biodynamic cultivation of these old vines which were planted in the 1970s on a plot slightly smaller than one hectare.
    In the cellar, the work is evidently just as careful. The wine is matured for 18 months on its fine lees and is made for cellaring. Its most memorable qualities are its beautiful golden colour, its glints of green, and its delicate blend of aromas with hints of white flowers, white pepper, sweet spices, ginger, fresh almond, white fruit and cream. These aromas lead elegantly into a pure, open and energetic palate, carried by a saline finish.
