The Pinot Noir vines spread out over marl and limestone soils not far from Meursault, at an altitude of around 260 metres. In the winery as in the vineyard, the estate implements strict, meticulous biodynamic methods, combined with a natural approach. The hand-picked Pinot Noir grapes are carefully sorted and transported to the winery to undergo gentle, low-intervention vinification. Fermentation is triggered by native yeasts naturally present in the berries. The cuvée is then aged for several months before being bottled.
The ruby-red colour complemented by violet reflections boasts a captivating aroma characterised by expressive notes of strawberry, raspberry, redcurrant, and confectionery. On the palate, the mellow tannins blend perfectly into a well-balanced structure, delicately leading to a light, delicious finish.

Coteaux Bourguignons Didon (Domaine) serve at a temperature of 16°C. It will pair perfectly with the following dishes: Chapon de Bresse rôti, Galettes de pomme de terre, Beaufort.

Information about domain Didon

In Chassey Le Camp, in Burgundy, Naima and David Didon have found their little corner of paradise where they've been growing vines biodynamically since 2017. If neither of them come from traditional winemaking families, they each developed a passion for oenology on their own. Naima began by working in administration, and david started his career in environmental protection. Combining their strengths, they chose a rigorous and demanding path, in the vineyard and the winery alike, to make wines with notable purity. Whilst their domain is small, it's safe to bet that the years to come will be in their favour...A domain to watch!
