This magnificent Saint-Joseph comes from young vines grown near Cornas on the hills of Sarras in Ardoix. The plot rests on soil that has all the characteristics of a granite terroir. Once the harvest has concluded, the grapes are entirely destemmed and undergo cold maceration for a few days before fermentation begins. In total, vinification takes place over three weeks. The wine is aged for three months in vats before it spends nine months in used oak barrels (from two to eight years old). The domain only produces between 5,000 and 8,000 bottles per vintage.
This elegant Saint-Joseph is full of fruit flavours and can be opened when young but also after spending 10 years in the cellar. A wine with a great personality that would go with a game and sauce dish or a beef roasted with thyme.

Information about domain Vincent Paris

Young Rhône winemaker Vincent Paris cultivates vines at the southern edge of the village of Cornas. He began making wine in 1997 when his grandfather left him his first hectare. Ten years later he bought an excellent plot, La Geynale, from Robert Michel. Today he cultivates more than six hectares, including five in the Cornas appellation. The steep terraces where his vines are planted are the inspiration for the names of his cuvées Granit 30 and Granit 60. Vincent takes as sustainable and natural an approach as possible and his Cornas wines receive frequent praise from the critics. This still fairly unknown domain is one to discover sooner rather than later.
