La finesse et l'élégance de son fruit font de ce vin l'allié idéal de viandes cuisinées de façon raffinée. Un vin biologique de très belle facture. More info
This Châteauneuf-du-Pape comes from a blend of several plots that each have their own identity: the Bois de la Ville and les Serres provide very concentrated juice, Farguerol and Cansaud provide extreme aromatic richness thanks to the red clay and finally the chalk-rich soils of Cabrières and Revès give incredible structure to the wine. On the nose, red fruit prevail accompanied by a slight woodiness. On the palate, the tannins are melted and elegant. The length is exceptional and over time the aromas of sous-bois, leather or tobacco can evolve.
Sylvie Vacheron manages Le Clos du Caillou with an expert hand. The vineyard was indeed once a clos, or walled plot, of 17 hectares but today the vines are planted across 53 hectares in the Côtes-du-Rhône and Châteauneuf-du-Pape appellations. The terroir is of a very high quality, primarily comprising sand and galets roulés with excellent filtering properties. Sylvie Vacheron runs the vineyard and cultivates it with loving care. The soil is enriched with organic compost, the plots are tilled regularly, herbicides are avoided completely and harvesting is manual. Sylvie’s determination has paid off as this is now one of the top domains in the appellation.
