    This Pommard from the Jean-Marc Boillot domaine comes from vineyards cultivated using ‘supervised control’ techniques (close to organic). The vines are not treated with any weed killers, and they are ploughed regularly (5-7 times a year). The terroir is clay-limestone. After manual harvesting, the grapes are carefully destemmed for vinification. Maturation is carried out for a long time using only a small amount of new barrels (25%) to avoid the wine becoming overly marked. This wine is the only one of the domaine to experience punching down.
    This wine has a beautiful precision with elegant notes of red and black fruits. Delicious and delicate, the wine also exudes aromas of flowers and spices. To be aged for a few years.
