Domain Sérafin owns five hectares of vines in the vicinity of Gevrey-Chambertin, which are classified as grand cru, premier cru, villages, and the regional appellation. The Pinot Noirs grapes used to produce this regional appellation cuvée are cultivated on a Prunier climate parcel located between the plots of Gevrey-Chambertin Platières and Grand Champs. As the domain practices rigorous pruning and disbudding to limit the yields, the fifty-year-old or so vines are cultivated with the utmost care. The vines are completely desteemed at the winery, and following fermentation, the wine is aged in barrels, 70% of which are new barrels.
The outcome is a resolutely Gevrey-style wine, with a bouquet of black fruits interspersed with spices, a generous and firm body, leading to a beautifully persistent finish. A wine with a pedigree far superior to that of a simple regional appellation, which can mature for a few years in a cellar and can be served with a rib-eye steak and pepper sauce, for example.

Bourgogne Christian Sérafin Père et Fils serve at a temperature of 15°C. It will pair perfectly with the following dishes: Bœuf mafé sénégalais, Carré de porc poêlé, Croque monsieur.

    The second generation runs the Sérafin family domaine in Gevrey-Chambertin. This small, 6 hectare domaine of organic farming extends over Gevrey-Chambertin, Chambolle-Musigny and Morey-Saint-Denis. The wines, with rich and mature fruits and subject to subtle élevage, are particularly appreciated by critics and wine guides, despite the fact that the domaine is highly discreet. References are thus made of the domaine at restaurants such as Bristol or Taillevent and yet its name means nothing to many amateurs!
