Maison Isabelle et Pierre Clément, found in Menetou-Salon near Bourges, is committed to a path of excellence that began all the way back in 1884. The domain’s motto is ‘no good wine without a good grape’. These grapes are grown in a terroir of chalk and clay that is exposed to the south. Their winemaking land stretches across 60 hectares and has the perfect semi-continental climate for the maturation of its grape varieties; for this cuvée, it’s Sauvignon that takes centre stage. In terms of the vinification, the grapes are firstly pressed using only their own weight. After being sorted, they are pressed pneumatically. Fermentation is spontaneous due to the indigenous yeasts, a process that takes place in stainless steel vats. The wine is matured on fine lees. On the palate, it is an elegant and supple cuvée, and we get aromas of white fruit in a dense and balanced mouthful. To be served cool and enjoyed in its youth. Pair this bottle with scallops and mashed sweet potatoes.
