Grains de Celles Extra Brut Pierre Gerbais serve at a temperature of 10°C. It will pair perfectly with the following dishes: Blinis aux oeufs de saumon, Noix de Saint Jacques au beurre blanc, Chapon au champagne.
Cette cuvée blanc de noirs correspond au méticuleux assemblage de chardonnay, de pinot blanc et de pinot noir. Chaque raisin soigneusement sélectionné provient des plus belles parcelles de Celles sur Ource, charmante commune dans l’Aube. Au chai comme dans les vignes, les méthodes utilisées reposent sur le travail de huit générations. Cependant, depuis 1996, Pierre Gerbais y a apporté sa marque de fabrique en y introduisant des méthodes biologiques et naturelles. Les fruits, récoltés à la main, font l’objet de vinifications en cuve inox thermorégulées. Après un débourbage à froid à 12 degrés, les jus réalisent avec soin les fermentations alcooliques et malolactiques. La cuvée est ensuite élevée sur lies fines, sans collage ni filtration avant un élevage sur latte en bouteilles pendant environ 30 mois. Pour finir, le blanc de noirs dégorge environ six mois avant d’être mis en vente.
Ce champagne particulièrement aromatique présente un bouquet floral accompagné de parfums d’agrumes et de fruits blancs. La bouche élégante et savoureuse révèle un subtil équilibre entre fraîcheur et minéralité.
Aurélien Gerbais, one of the leading winemakers on the Côte des Bars, is now the eighth generation to run the family estate in the village of Celles-sur-Ource. Tucked away in the southern Champagne appellation, a stone’s throw from Burgundy, the estate and its entire history stem from a wedding gift of less than one hectare of vines that Pierre Gerbais received which became his life’s work. He developed and nurtured his vines on over twenty different terroirs, including the oldest Pinot Blanc vine in Champagne, planted in 1904. Pascal Gerbais took over managing the estate, massively developing its commercial operations. Today, his son Aurélien runs the estate, which covers almost 17 hectares of vines, which he cultivates in keeping with the family tradition. The mosaic of plots and terroirs, cultivated using organic and biodynamic methods, allows the estate to produce superb Champagnes that reflect all the diversity of this exceptional terroir.
