Terrasses du Larzac Ode Aux Ignorants Mas Combarela serve at a temperature of 15°C. It will pair perfectly with the following dishes: Rôti de veau et risotto, Pièce de boeuf grillée.
La cuvée « Ode aux Ignorants » est un hommage à la BD « Les ignorants » de Etienne Davodeau (en collaboration avec Richard Leroy), qui a suscité la vocation du vigneron Olivier Faucon. C’est un assemblage de syrah (50%), carignan et grenache. Les raisins sont issus des Terrasses du Larzac (appellation récente, reconnue en 2014). La viticulture au domaine est respectueuse de l’environnement, avec une certification bio. Les rendements sont maîtrisés et les vendanges manuelles, souvent au matin pour conserver de la fraîcheur.
En cave, la vinification est relativement douce et peu interventionniste, pour révéler le fruit des trois cépages. Un élevage de 18 mois en fûts donne de la structure au vin. A la dégustation, le vin révèle des notes de fruits rouges et noirs, de minéraux, d’encre, de graphite. Les tannins sont très fins. Servez ce vin à 16-18°C, accompagné d’une bavette saignante, de côtelettes d’agneau ou d’une ratatouille. Vous pouvez déguster ce vin dans sa jeunesse, ou bien le garder quelques années en cave. Il dispose d’un beau potentiel (12 ans et plus, selon le millésime) !
Olivier Faucon founded Mas Combarèla which is located in Saint-Jean-de-Fos just a few kilometres north-west of Montpellier in 2016. The vineyard covers 11 hectares that are found in both AOC Terrasses du Larzac and IGP Saint-Guilhem-le-Désert. There, the viticulture respects the environment (certified organic), and yields are controlled.
In the cellar, vinification is gentle with the aim of creating wines that reveal the finesse of the local varieties and terroirs. The domain crafts rosés, whites and reds from several varieties which include Grenache, Mourvèdre, Cinsault, Carignan, Syrah, Grenache Blanc, Carignan Blanc and Vermentino. The wines are striking due to their intensity, light profile and saline notes with the red wines possessing silky tannins.
Since its very beginning, Mas Combarèla has been a favourite of the critics (Jancis Robinson, La Revue du Vin de France, Guide Hachette, Bettane+Desseauve) thanks to the regularity of its wines vintage after vintage. It’s also a firm favourite of the iDealwine team!
