IGP Pays d'Oc Terroirs d'Altitude - Chardonnay Marquis de Pennautier (no reserve) 2016

The wine

The vines of this cuvée are exposed to the north in order to capture some freshness during the hot summer, and this means the grapes retain their acidity as well as developing lovely aromatics. Harvesting takes place at night, then the grapes are immediately pressed. Settling takes place in the cold, and fermentation on fine lees is carried out in barrels.
