Dominique Hauvette is a discrete winemaker whose work is simply remarkable. Located in Saint-Remy-de-Provence, she founded the domain in 1988 with two hectares and a dilapidated winery. The clay-limestone soils and the discerning vinifications and élevage have allowed Dominique Hauvette to raise her domain to the finest in the appellation. The domain has been cultivated in biodynamics since 2003. The reds are racy and intense, whereas the whites are big and ripe, with bitter notes.
Petra is an outstanding rosé crafted by a Provence domain with an established reputation: Domaine Hauvette. This is a blend of mainly Cinsault with Grenache and Syrah grapes. Grown biodynamically, these southern varietals have been vinified in concrete, egg-shaped containers that help to preserve the texture and freshness of the wines. Good to serve with food, this cuvée marries powerful aromatics with minerality and flavour. On the nose we find fruity and floral notes that carry through to the palate. The mineral aspect of the wine is what lifts it; there is no heaviness here! It will pair nicely with a summery dish such as salad, a rustic tart, or even vegetable lasagne. Alexis Goujard from the RVF said “very few rosés have this much energy and concentration. Behind the smoky nuances, the mineral touch and the burst of fruit is a structured palate with a persistent underscore. This rosé will evolve nicely with ageing.”
