The wine
Les Chouacheux – from the Old French word sausseux, meaning "willows" – is a Beaune Premier Cru benefiting from a sloped terroir at an altitude of 230 metres. The destemmed berries are vinified in open vats to obtain the best possible expression of their terroir. The wine is then matured in oak barrels for 18 months. Its attractive cherry-red colour, intense scent, vivacity and fresh suppleness make it the ideal partner for dishes of refined, light or marinated meats.
