The wine
An estate located in Arbois, in the Jura region, taken over in the early 1990s by Pascal and Evelyne Clairet, Domaine de la Tournelle presents a white Arbois called Fleur de Savagnin. This is a single-variety wine made from a grape emblematic of the region, which through the use of organic farming methods draws its nutrients from the grey marl soil. It offers yields that fluctuate between 35 to 40hl per hectare and is harvested by hand, allowing for careful sorting of the grapes. In the cellar, the desire to produce an authentic wine with a strong identity continues. Whole bunches undergo gentle pneumatic pressing and indigenous yeasts trigger alcoholic fermentation, which initially takes place in vats, then in wooden containers (demi-muids or 228-litre barrels). Sulphur is not added during this process. Ouillé (topped up), and therefore non-oxidative, this wine is bottled according to the lunar calendar after maturing in used oak barrels on fine lees for around two years. On tasting, the wine reveals an immediate complexity of flavour and aromas magnified by a striking minerality.
