The wine
This cuvée was made from 50-year-old vines grown on a plot of one perfectly exposed hectare. The domain chose to vinify and mature part of the wine in barrels for a year with regular stirring. The other part was vinified and matured in stainless steel vats on fine lees. Thus, the wine has a particularly rich and opulent profile, calling for gastronomic pairings with dishes in creamy sauce.
About the Producer Bernard Defaix
This domaine, located in the heart of the Chablis in the village of Milly, was founded by Bernard Defaix in 1959 and is now managed by Sylvain and Didier Defaix. The domaine is certified for organic farming and priority is focused on vine cultivation (controlling the yield) and respecting the identity of the different terroirs of the domaine.
