Usually a place for Pinot noir, this time it's Chardonnay that takes centre stage in this Fixin cuvée. More info

This Fixin blanc comes from vines planted in the year 2000 that span a surface of 2,400 square metres. Whilst this area’s usual resident is the Pinot noir grape, space has also been made for Chardonnay. The vines are grown organically and the harvests are carried out by hand, including a rigorous sorting process with small yields.
There is little intervention as the grapes are vinified, with a third of the grapes kept in whole bunches as the wild yeasts ferment the juice. This white wine was matured in oak casks (20-30% new) for around 15 months. In the glass, it offers a floral bouquet with white fruit (pear, peach) and a certain richness. It can be enjoyed in its youth or after a few years of ageing, and it will pair perfectly with fish.

    The wine

    Information about domain Hubert Lignier

    The excellent reputation of Domaine Hubert Lignier goes back a long way, due to the finesse and concentration of their wines. In 1991 Hubert's son Romain joined the domain. He sadly died in 2004, and two years later Romain's brother, Laurent, joined his father. The domain, practicing sustainable agriculture, counts eight hectares of vineyard close to Morey, Gevrey and Chambolle.
    All the work is carried out with quality in mind (manual harvests, low yields, strict sorting); according to Laurent, “75% of a wine's quality comes from the quality of the vineyard”. Most of the grapes grown are Pinot noir, with a small amount of Gamay and Aligoté.
    The juice is vinified with little intervention, with wild-yeast fermentation and long maturations of 21-22 months on lees. The wines are not fined or filtered. What we find in the glass is a suppleness with tannins of a velvety character.
