What the experts say...

"Derrière sa couleur très tendre, ce cinsault livre une performance de femme fatale. Il exhale un merveilleux parfum de rose fanée, offre une texture racée, fine, excitante, aérienne de bout en bout. Voici le véritable pinot du Sud !" (RVF 2017)

The wine

Les Hauts de Carol's comes from old Cinsault vines (over 50 years old). The wine is aged in barriques for 24 months. The nose is elegant, with aromas of red fruit (strawberry, cherry) and menthol and cocoa notes. The palate is extremely pure and offers a very silky texture, melted tannins, fruit and freshness. This wine goes very well with white or red meat dishes.

Information about domain Terrasse d'Elise

Xavier Braujou has been running the family-owned Terrasse d'Elise domain since 1998. Keeping quality as his constant watchword, he has chosen to reduce yields dramatically (to around 20 hl/ha) and to work with old grape varieties. In particular, he has opted for certain cuvées to work with single varieties, showcasing his Cinsault, Carignan and Mourvèdre grapes – too often considered only as grapes for blending. Although not certified, the vineyard is run according to organic and biodynamic principles.
