Les Glacières is a white wine blended from Grenache Blanc and Grenache Gris (40%), Roussanne (40%) and Macabeu (20%) grapes. This Côtes du Roussillon is crafted from vines that are certified organic. The Vingrau terroirs where they grow is made up of limestone and clay. Set against the cliffs, the plots are located way up high, imparting their freshness onto the grapes which can be found in this wine. The grapes are harvested by hand and yields are controlled (to about 30 hectolitres).
In the cellar, the wine is made in a way that will bring out the best characteristics from each plot. In addition to that, there is very little intervention (alcoholic fermentation is started by natural yeasts, for example). Maturation lasts for 8 months and takes place in demi-muids (600-litre barrels). Tasting the wine reveals its exceptional purity, carried by its massive freshness and the precision of its ageing. The particularly smoky and citrus fruit notes are supported by a lively and long undercurrent. A great Roussillon white wine that should be drunk cool (10-12°C) with oven-roasted Mediterranean vegetables or grilled shrimp.

Jean Gardies has managed this estate since the early 90s. The vineyard is farmed in accordance with organic wine-growing methods and is located in two exceptional areas (Vingrau and Espira d'Agly), allowing the wines to reach full expression via the different cuvées produced by the estate. The vineyard is a terroir of black schist and limestone buffeted by the Mediterranean winds. All of the elements lend remarkle power and unparalleled character to the wines.
