The Rococo cuvée is a red Saumur-Champigny made from the noble Cabernet Franc. These grapes are grown organically and biodynamically across 8.8 hectares of vineyard. There, the terroir is rich in chalk and clay.
After being picked by hand, the bunches are totally destemmed, and no sulphur is added whilst they vinify in vats. Little to no additives are used during vinification, and the juice ferments with the help of wild yeasts. The wine is matured for 5 to 6 months depending on the vintage.
In the glass, this Saumur gives off a fresh nose of blackcurrant and blackberry. It has a round and flavourful palate with supple tannins and exceptional freshness. This cuvée can be enjoyed from now, whilst it's still fruity, though it can be aged for 5-6 years. Serve alongside a beef bourguignon or grilled duck.
Saumur-Champigny Rococo Bruno Dubois serve at a temperature of 16°C. It will pair perfectly with the following dishes: Magret de canard grillé, Carré d'agneau, Boeuf Bourguignon.

Bruno Dubois took up the reins of “Domaine Dubois”, a family property owned by his father and his uncle, to make his first vintage in 2002. This wasn't the very beginning of his wine journey, though, having built solid foundations learning from some of the finest (la Tour du Bon, Marcel Lapierre…).
Conversion to organics and biodynamics took place in 2009 and 2015 respectively. Located in Saint-Cyr-en-Bourg, the domain now spans 11.3 hectares, shared between 2.5 hectares of Chenin and 8.8 hectares of Cabernet Franc. These vines have an average age of 50 years old, where they grow in soil that is rich in clay and chalk.
These cuvées stay true to the fruit from which they are made, resulting in wines that are pure, flavourful, and fine. The work of a superb artisan at an up-and-coming domain!
