    Vincent Dauvissat’s wines are highly sought after in the world of wine, and are also emulated by winemakers. Here this family domaine offers up a Petit Chablis which turns out to be a very nice introduction to its expertise. A rigorous and passionate expertise which translates into an organic and non-certified biodynamic cultivation. The grape yields are limited to promote optimal ripeness and the vinification has very little intervention in order to let the wine express the quintessential qualities of its original terroir. Sulphur intake is also limited, which allows the wine’s authenticity and purity to be revealed.
    Tasting this Petit Chablis is immediately seductive and is surprising in its balance between chalky nuances and intensity. The wine has a particularly lingering finish, and can be appreciated just as much when it is young as after a short cellaring period. We recommend pairing it with a savoury appetiser or a delicate starter. We have in mind salmon rillettes, seared scallops or cauliflower mousseline with star anise and smoked salmon.

    Created in 1931, Domaine René and Vincent Dauvissat has been managed from generation to generation by the Dauvissat family, the grandfather Robert, the father René and then Vincent who joined it in the 1970s with a constant concern for respecting the vineyard. The vineyard occupies 11 hectares in total and produces on average 70,000 bottles per year, covering all types of crus. The keyword which guides the entire process is strict respect for the terroir: vines are cultivated in a sustainable, responsible manner, yields are modest and new oak is used for fermentation and aging. As a result, the wines are fresh and with fine mineral content, with good aging potential (leave in the cellar for at least five years). Considered among the best producers of Chablis, Domaine René and Vincent Dauvissat produce reliable, good quality wine.
