The wine

Bottled in 2020, this single cask from the Bimber distillery was distilled in 2016. Matured in new oak cask no. 94, only 294 bottles were released, all for the export market.

About the Producer Bimber

The Bimber distillery, built in 2015 in Park Royal, in north-west London, was the first distillery to appear in the capital for over a century, following the closure of the last in 1903. Bimber, which is Polish for “illicit alcohol’‘, was named by founder Dariusz Plazewski, who grew up in a family of distillers and moved to London in 2003. Distillation began the following year and the first single malt was released in 2019. The company sources its barley from a single producer, uses traditional malting floors and favours slow fermentation (seven days in wooden washbacks). This artisanal approach continues with the use of gas-fired Spanish Hoga stills. The ambitious distillery has met with great success and new editions are always highly awaited.
