    The wine

This cuvée is vinified and matured in oak casks for 14 to 16 months (35 to 50% new oak). It gives off aromas of white flowers and a light oakiness. Full-bodied on the palate, it has a nice finesse, and is framed by a pleasant minerality from its limestone terroir. As a whole, the cuvée is pure and direct. This wine will go very well with refined fish and shellfish. It can be aged for a good ten years.

    Information about domain Albert Bichot

Albert Bichot is an illustrious maison of Burgundy. The family settled in Burgundy in 1350 but it was only in the 19th century that it became interested in the vine and vineyards. In 1831, Bernard Bichot developed a trading house in his name. Since 1996, Alberic Bichot (6th generation) has been working to raise the quality of wines produced. He acquired many plots, meaning that the maison now has 100 hectares of vineyards. Here we find the Clos Frantin on the Côte de Nuits, the Domaine du Pavillon and the Domaine Adélie on the Chalonnaise coast as well as the Domaine Long Depaquit in Chablis. These wines are certified as organic. At the same time, the maison carries out its trading business by purchasing only carefully selected grapes. The wines are all vinified in Beaune under the leadership of the very talented Alain Serveaux.
