Domain: Patrick Desplats

Patrick Desplats is a dedicated winemaker who set up the Domaine des Griottes, in the heart of the charming commune of Saint Lambert du Lattay in 2001. The vineyard boasts nine hectares of vines stretching across some of the region’s finest appellations. Passionate about natural wines, he cultivates the grape varieties typical of the region, such as Cabernet Franc, Cabernet Sauvignon and Chenin, with the greatest respect for the soil and biodiversity. Each parcel receives specific care depending on its needs, to allow the personality of each one to shine through. In the winery, vinification involves minimal intervention and sulphur is used in minute quantities. This allows the fruit to release and develop all their aromas naturally. So it’s in this peaceful, wholesome environment that the winemaker produces authentic, fresh, fragrant wines that perfectly reflect the region’s terroir and grape varieties.
