Côtes du Jura La Source Berthet-Bondet 2018 (White)

Domaine Berthert-Bondet was set up in the mid-1980s and is a relatively young domain for this region. The Berthet-Bondet family don't come from a winemaking background but rather they were artisans from Oyonnaux. Jean Berthet-Bondet had other ambitions however and chose to study Agronomy at Montpellier. It was here that he met Chantal, his wife. Later on, this desire to work the land led him to landing an apprenticeship and then a job at Château-Chalon while Chantal continued her studies at the agricultural school in Montmorot. Soon Chantal became agricultural engineer under the Regional Department of Agriculture. In 1984 Jean and Chantal bought this domain and carried out their first harvest in 1985. The property boasts a 16th century vaulted cellar. The couple gradually extended the domain: in 1986 they converted an old barn into another cuverie and in 1987 they built another cellar for ageing the wines as well as a new storage and labelling area. In January 2012 Chantal retired from her position in the civil service and concentrated full time on the domain. Jean's daughter Hélène now also works at the domain. The vineyard spans 15 hectares across the Château-Chalon and Côtes du Jura appellations. The domain produces Savignin, Chardonnay, Trousseau Poulsard and Pinot Noir and has had organic certification since 2013. Fruit forward and fresh, the wines are excellent and have made a very good name for this domain.

Créé au milieu des années 80 par les époux Berthet-Bondet qui ne viennent pourtant pas du milieu viticole, ce domaine éponyme s'attache à signer de beaux vins et à magnifier les terroirs qu'il dispose. Ainsi, les 15 hectares de vignes sont cultivés selon des principes bio certifiés depuis 2013. Le côtes-du-jura blanc La Source est un assemblage de chardonnay majoritaire à hauteur de 75% et de savagnin, un cépage noble local. Ces vignes ont été plantées il y a 25 ans environ et, depuis, puisent leurs lettres de noblesse dans un sol de marnes irisées. Un rang sur deux est enherbé et les sols sont travaillés afin d'inciter une vie microbienne locale qui permet une saine concurrence avec les ceps. Les baies sont récoltées à la main avant de faire l'objet d'un pressurage en vendange entière. Le vin est ensuite élevé 10 mois en cuve inox. Un contenant inerte qui permet de préserver la fraîcheur et l'énergie des cépages. Vous apprécierez ainsi sa jolie robe jaune pâle, son bouquet fruité, floral et minéral et sa tonicité. Savourez-le dans sa jeunesse, dans l'idéal trois ans après son millésime, en guise d'apéritif ou accompagné de mets fins aux accents maritimes. Tartare de saumon, ceviche ou blinis au tarama lui feront honneur.
