Macvin du Jura Pinot Noir Bénédicte et Stéphane Tissot ---- (Red)

The domain might still carry the name of his parents, but Stéphane Tissot (and his wife Bénédicte) took over the family business over 20 years ago. In 1995, Stéphane began to reduce the amount of fertiliser so as to pave the way for organic viticulture. Around this time he also stopped using chemical herbicides altogether. In 1999, the then 28 hectares (now 46 hectares) became entirely organic and, after a few years, the whole domain became biodynamic in 2004 (Demeter certification). Stéphane's hard work has transformed the quality of the grapes. With such good quality fruit, vinifications are relatively easy and require very little intervention. Natural yeasts are used in fermentation and a very small amount of sulphites are added, nothing else. The end result is an excellent expression of terroir with intense aromas. Stéphane's quest to convey his many different terroirs has led him to produce nearly 50 different cuvées from many different grape varieties using various vinification methods. For example, for the Savagnin, a variety typical of the Jura, the property produces wines with and without oxidation (i.e. topping up of the barrels) and vin jaune. This domain is at its zenith and is one of the Jura's (and iDealwine's) best kept secrets.

Pour ce domaine, l'un des plus connus du Jura, la reconversion en biodynamie n'est pas été un long fleuve tranquille. Cohabitant avec ses parents, Stéphane Tissot a voulu révéler la magie de ses grands terroirs. Curieux et dynamique à la cave, il a noté l'insuffisance d'une vinification maîtrisée pour révéler la grandeur du terroir. Il lui a fallu convaincre ses parents de l'intérêt de la bio et de la biodynamie. Ce n'est ainsi qu'à partir de 2004 que le domaine se convertir à la biodynamie, s'étendant alors sur près de 50 hectares, dont quelques parcelles sur la côté de Curon et Château-Chalon, pour ne nommer que les plus belles.
Cette cuvée de macvin est originale : composée de pinot noir, elle saura pourtant ravir les amateurs de macvins tendus et élégants. Son élaboration, qui consiste à rajouter du marc à un moût en fermentation, en font un vin aux aromatiques intenses bien que parfaitement définies. Son potentiel de garde vaut celui des plus grands liquoreux. Reposant sur un terroir de calcaire du Bajocien, depuis des vignes de 30 ans exposées à l'Ouest, cette cuvée fer un excellent accord avec du chocolat. En effet, son aromatique épicée et sa grande structure en bouche lui assurent la capacité de s'accorder au mieux avec le chocolat.
