The Cabernet Franc grapes are entirely destemmed, fermentation is triggered by native yeasts and occurs in stainless steel vats. If necessary a punch down the cap if conducted to help extraction. After the running-off process, the wine is pressed and aged in oak casks, including 50% of new wood, for 18 to 24 months. The final blend is matured in stainless steel vats for 8 months, before a small dose of sulphite is added before bottling.
This elixir offers a tasting experience combining power and elegance. The aromas are beautifully woody, with notes of liquorice, green pepper, strawberry, raspberry and ripe fruit. On the palate, the attack is clean and lifted by spicy notes, giving this nectar a distinctive personality.

About the Producer Arnaud Lambert
A true nature lover, Arnaud Lambert manages his domain using methods which are extremely respectful of nature. So, he converted his domain to organic agriculture and subsequently to biodynamic agriculture. Arnaud Lambert inherited this domain from his father Yves who created it in 1996. He returned to the domain at the age of 47 to learn the art of wine making and take up the reins.
Today there are 15 hectares of vines in St-Cyr-en-Bourg and 15 hectares in Brézé. Embracing his vintner vocation in 2005, Arnaud Lambert has begun to stand out, producing wines reputed for their finesse, purity, and precision.
