Le Calvaire is a wine made from ouillé (topped up) and non-oxidised Chardonnay, with delicate aromas of white flowers and citrus fruits, perfect to enrich your indulgent dishes.

Harvests are carried out by hand and vinification is conducted using natural yeasts to favour the expression of the grape variety. Ageing takes place in oak barrels that are at least three years old for 12 months without fining or filtration, to produce a wine of great finesse.
Le Calvaire stands out as an aged, non-oxidative wine, offering delicate aromas of white flowers, citrus fruit and subtly integrated woody notes. Its elegant structure makes it a well-balanced and persistent wine on the palate. Ideally served at between 12°C to 14°C, this Côte de Jura would pair perfectly with dishes such as raclette, asparagus with parmesan or even Comté cheese. It also adds a little something extra to dishes such as scallops with saffron or blanquette de veau (veal stew).

About the Producer Croix et Courbet
Croix et Courbet is a wine merchant which was founded in 2019 by two winemakers (David Croix from Domaine des Croix in Burgundy and Damien Courbet from Domaine Courbet). They have risen through the ranks in Jura where they have set up base. Originally from the region, Damien Courbet is always on the quest to find wonderful plots of Savagnin and works to build solid relationships with partner winegrowers who use organic methods, or at least, are going through the process of converting to organic agriculture. The same care is taken in the cellar where the idea is that they intervene with the process as little as possible. Natural yeasts are protected, and sulphur is banished. Always on a quest for finding new ways to make wine, they use barrels, stainless steel vats and cement eggs to age the wines, which are known for their balance of power and elegance as well as the complexity of their aromas.
