The Cellier Saint Benoit vines lovingly nurtured by hand benefit from organic farming practices combined with a natural approach. The Savagnin grapes transform into yellow wine in oak barrels. Evaporation forms a yeast veil, protecting the wine from exposure to air and nourishing it for many years. Yellow wine spends at least six years and three months in a cellar, where it develops its extraordinary complexity and wonderful nutty aromas.
The straw-yellow colour is complemented by an intense nose combining aromas of walnut, hazelnut and almond with hints of undergrowth and spices. On the palate, light tannins emerge alongside powerful aromas of walnut, green apple and spices.
