Ladoix Les Chaillots from Domaine Maillard is a red wine elaborated from a parcel located near the Aloxe-Corton 1er Cru. Traditionally cultivated with ploughing and green harvesting, the vines bear only six or seven bunches each, ensuring optimum concentration. The terroir is a rich brown soil with hard limestone pebbles and gravel, underlain by marly limestone dating from the Middle and Upper Jurassic periods. The warm summers and dry autumns create ideal conditions for the grapes to ripen perfectly, enriching their sugar levels and colour intensity. Manual harvesting is followed by a rigorous sorting process, where only the healthiest, ripest grapes are kept. The temperature-controlled winemaking process lasts 12 to 15 days and includes one or two daily punch downs. The juice is left to rest in vats for a short time before being matured for 18 months in 228-litre casks, including 50% new wood, before being lightly filtered and bottled, ensuring that its authentic character is preserved.
This vibrant ruby-red nectar reveals a powerful nose of red fruit. The palate is round and generous revealing silky tannins.


About the Producer Maillard et Fils

The Maillard family has been part of Burgundy's viticultural scene since 1766. In 1952, Daniel Maillard, father to Pascal, decided to dedicate himself to this career, concentrating on enlarging the domain and growing cuvées in a way that respects the terroir and the soil. The domain has gone from 2 hectares to 19, shared across the areas of Aloxe-Corton, Pommard, Beaune, Ladoix-Serrigny, Chorey-les-Beaune, Meursault, Volnay, and Savigny-les-Beaune. In the vines and the winery alike, the methods are traditional, and all the cuvées are classed as grand cru in the regional appellation. They are worked meticulously, from the selection of the grapes to the vinification and the maturation in 228-litre oak barrels. If, one day, you have a chance to visit, don't miss out on going down into the cellar where a magnificent well serves as a tasting table.
