The Arbois appellation is the beating heart of the Jura vineyards. The Sous la Roche locality sits high above Pupillin, between 480 and 520 metres in altitude, making it one of the highest vineyard sites in France. The vines thrive on poor, free-draining soils dominated by white Bajocian limestone scree over blue and grey Lias marls. Grapes are hand-harvested, with rigorous sorting in the vineyard. The trousseau grape, naturally prone to oxidation, is handled with great care. Fermentation is spontaneous, carried out by native yeasts, with a whole-bunch maceration of around 15 days and no forced extraction. Ageing takes place in seasoned oak casks for 12 months, without racking or intervention.
The wine displays a bright, clear ruby-red hue. The nose is refined, intense, and gently spiced, offering aromas of small red fruits, white pepper, and a hint of noble vegetal character. On the palate, a fresh, pure attack reveals fine-grained tannins and a firm structure, leading to a long, saline finish.
