Scythian Wines Palomino comes from the Lopez Vineyard planted in 1912 in the Cucamonga Valley. Vinified in sherry casks, it presents spiced notes, minerality and freshness.

The sun in this region, combined with the sand and gravel, give the wine its minerality and structure. The Palomino grapes are harvested with care. Vinification starts with partial contact with the skins for a week followed by fermentation in sherry casks and used barrels. Ageing lasts for around seven months with the addition of sulphur during fermentation. This unique method enables the winemaker to produce a wine with fascinating aromas.
On the palate, the wine stands out with notes of spices, ginger, citrus fruits, almond and sea salt, which it gets from the fermentation stage in the Cota 45 sherry casks. The flavours are supported by a lively minerality, notes of oyster shell, pear and spiced apple. This remarkable wine stands out for its acidic freshness, delightful spice and wonderful tautness.

Led by acclaimed winemaker Rajat Parr in partnership with the Phelan family, the estate seeks to craft vibrant, precise and elegant wines that remain true to their site while offering a refreshing alternative to the richer, more powerful style often associated with California. The vines, planted on a mosaic of soils and shaped by the cooling influence of the Pacific, give rise to distinctive wines such as Autrement, a blend inspired by the traditions of Savoie combining Gamay, Mondeuse and Pinot Noir. The estate also produces original expressions of Pinot Noir, Trousseau, Mencía, Poulsard, Chardonnay, Gringet, Jacquère, Altesse and Savagnin. Altogether, Phelan Farm extends over just 12 acres (4.85 hectares).
Fermentations rely exclusively on native yeasts, with little sulphur and no inputs, allowing the purity of the fruit and the character of the terroir to shine through in every bottle. The wines are aged in old oak barrels. and bottled without filtration.
Produced in tiny quantities, Phelan Farm’s wines are defined by freshness, saline tension and vibrant energy, capturing the essence of this singular, unspoilt landscape.
