A legendary white grape variety in the Jura, Savagnin is renowned for its range of aromas and colours, which produce some exceptional wines. These Savagnin vines grow in grey marl and schist soils. The parcels, on a 30% incline and at an altitude of around 400 metres, require meticulous care. Harvests are therefore carried out entirely by hand. In the cellar, the grapes are partially destemmed before going through cold static clarification for 12 to 24 hours. Alcoholic fermentations are then completed in vats using the indigenous yeasts naturally present in the grapes. Finally, the cuvée is aged on lees for around 20 months before being bottled.
The intense and fruity bouquet unveils aromas of citrus fruits and herbaceous notes. The fresh and dynamic palate is marked by a wonderful balance between richness and firmness, leading to a long finish.
