The wine
Located close to the grand crus of Bâtard-Montrachet, this climat is characterised by a soil of clay, limestone and small pebbles, providing it with particularly good drainage. Its perfect exposure ensures optimum maturity for the grapes, which are harvested manually; the wine is matured in casks. This cuvée is distinctively rich, generous, complex and elegant. It delivers notes of citrus and white fruit combined with characteristic élevage notes (toasted bread). It can be enjoyed in its youth or after ten years of keeping. We suggest a pairing with wild fish in sauce. Fans of mature wines will derive real pleasure from keeping this one for a while; it will deliver flavours of nuts, butter and exotic fruit.
About the Producer Fernand et Laurent Pillot
Les Pillot have been present in Chassagne since the 19th century on several independent domaines. Laurent and Marie-Anne work over 15 hectares on many appellations of the Côte de Beaune. All their wines are vinified and aged in their cellar of Chassagne-Montrachet, reconciling modern equipment with respect for the soil.
