Silice Rouge is a 100% Mondeuse sourced from the wine-selling operations of Domaine des Ardoisières. A delightful cuvée crafted from the grapes of neighbouring vineyards.

Silice Rouge is the result of the haute couture negociant work of Domaine des Ardoisières, located in Savoie. The Mondeuse Noire vines are all cultivated under Organic Agriculture practices and sourced from neighbouring estates. They are spread across the terraced vineyards of Cevins, which face south-southeast and are characterised by schist and silt soils. Additionally, the vines flourish on the slopes of Saint-Pierre de Soucy, exposed to the south and west, where the soil is rich in marly schist, clay, and limestone. The grapes are hand-harvested and meticulously sorted before being placed in whole bunches in tanks to maintain the quality of the fruit.
In the winery, alcoholic fermentation is triggered by native yeasts and lasts around three weeks. This is followed by ageing, where the wine spends over a year in stainless steel tanks to preserve all the properties of the Savoie terroir. Silice Rouge is a Mondeuse full of fruit and remarkable minerality, making it an excellent introduction to Savoie wines.


About the Producer Ardoisières (Domaine des)

The Domaine des Ardoisières was created ex nihilo in 1998 on land that had been planted with vines in Roman times, but which had not produced wine for centuries. Michel Grisard, one of the leading Savoyard producers, was the driving force behind the project for a long time, before handing it over to the current manager, Brice Omont. The vineyard is cultivated according to biodynamic principles and vinification is extremely natural with as little intervention as possible. The property produces three white wines and two reds. The "Schiste" cuvée (7,000 bottles) is produced from four traditional Savoyard varieties: Jacquère, Malvoisie, Roussanne and Mondeuse Blanche. The vines are grown on spectacular south-facing terraces, with small yields of 25 hl/ha. Vinification, with indigenous yeasts is carried out in barrels which have already been used for three to five wines.
